Grilled Chicken with grilled zucchini and the Italian roasted snap peas

Ingredients

- Chicken -
3 Chicken Breast
couple of teaspoons of olive oil
Redmonds sea salt
California Garlic
Italian seasonings

- Zucchini -
3 large Zucchini
1 tablespoon olive oil
fresh dill
garlic powder
low sodium soy sauce

- Italian Roast Snap Peas -
1 large leek, white part only
1 pound sugar snap peas, trimmed
1/2 tsp salt
1 cup cherry tomatoes. halved
1 teaspoon dried oregano

Directions

- Chicken -
marinate for an hour in a couple teaspoons of olive oil and Redmonds sea salt
Sprinkle California Garlic
Sprinkle Italian Seasonings
Spray Pam on the Grill cook 5 minutes on each side until the chicken reaches 165 degrees

- Zucchini -
slice in half length wise
sprinkle with olive oil
Salt/pepper
Cut and chop fresh dill and then garlic powder
Few drops of low sodium soy sauce
Marinate for 30 minutes
Yield: 2/3 cup
Cook on Hot grill until fork tender

- Italian Roasted snap peas ( Andover diet center recipe) -
This is allowed 2 times per week.
Preheat oven to 425 degrees, F
Cut leek halves into 2 inch lengths and then very thinly slice each piece lengthwise, toss the leek, peas , oil and salt in a medium bowl. Spread on baking sheet
Spread on baking sheet.
Roast 15 minutes
Stir in tomatoes
Return to the oven and roast until vegetables begin to brown about 10 minutes more.
Toss with oregano and serve
