    Puffed Zucchini Pastry

Puffed Zucchini Pastry

Ingredients
1 cup seeded and chopped zucchini. about 1/4 inch in size.
2 Tablespoons Walden Farms Fruit Spread Apple Butter.
1 pkg Honey Nut Cereal, crunched up
2 egg whites or 1/4 cup liquid egg whites
1/4 tsp baking powder
1/4 tsp vanilla
Cinnamon to taste

Directions
Make sure you peel the outside of the zucchini. You want it to look white, like chopped apples

Place the zucchini on a foil lined cookie sheet sprayed with cooking spray.
Place the 2 tablespoons of apple butter on top.

Broil this for 4 minutes, or until they are tender but firm (like a baked apple.)
Occasionally stir the ingredients to coat all the zucchini with the apple butter spread.
I sprinkled a little cinnamon on the top and mixed.

While that was cooking I prepared the Non-Restricted Pancakes, If you have the ITG unrestricted pancake use that or you can use the Honey Nut Cereal Non-Restricted Pancakes

Mix together in small bowl the following;
egg whites,
1/4 tsp vanilla
Add in to cereal pkg the following;
1/4 tsp baking powder
cinnamon

Pour dry mix in to egg white mixture and combine.
Add enough water to desired consistency. (I used 2 ounces of water.)
Cook in pan as you would pancakes. (I fashioned them in a triangular shape.)

Assembly:
Place crisped pancake on the plate add the apple/zucchini mixture
Roll like a crescent roll.
